minutesSoft, naturally sweet oat bars perfect for little hands. Made with wholesome ingredients and homemade apple sauce, a great snack or breakfast on the go.
Ingredients
1 1/2 cups rolled oats
1/2 cup oat flour (blended oats – see note below)
2 tbsp ground flaxseed + 2 tbsp water (gelled for 5 minutes)
1 tsp cinnamon
2 1/2 tbsp melted coconut oil
1 cup apple puree (see my homemade recipe below!)
2 tbsp maple syrup
- Note: You can substitute the oat flour with 1/2 cup rolled oats, the bars will just be a bit more crumbly (still delicious!)
- Ingredients for Homemade Apple Sauce (Make prior – instructions below)
4 apples, diced
1 tbsp coconut sugar
Pinch of salt
1/2 cup water
Directions
- Preheat oven to 180°C (350°F). Line a brownie pan.
- In a medium bowl, mix the melted coconut oil, apple purée, maple syrup, and flaxseed gel until well combined.
- Add the rolled oats, oat flour (or extra oats), and cinnamon. Mix until everything is evenly coated.
- Press the mixture firmly into a lined brownie tin in an even layer.
- Bake for 25–30 minutes until the edges are golden and the centre feels set but still slightly soft. It will firm up a lot as it cools.
- Cool completely, (can chill the slab in the fridge for 30+ minutes) and cut into toddler sized bars.
