Soft, naturally sweet oat bars perfect for little hands. Made with wholesome ingredients and homemade apple sauce, a great snack or breakfast on the go.

Ingredients

  • 1 1/2 cups rolled oats

  • 1/2 cup oat flour (blended oats – see note below)

  • 2 tbsp ground flaxseed + 2 tbsp water (gelled for 5 minutes)

  • 1 tsp cinnamon

  • 2 1/2 tbsp melted coconut oil

  • 1 cup apple puree (see my homemade recipe below!)

  • 2 tbsp maple syrup

  • Note: You can substitute the oat flour with 1/2 cup rolled oats, the bars will just be a bit more crumbly (still delicious!)
  • Ingredients for Homemade Apple Sauce (Make prior – instructions below)
  • 4 apples, diced

  • 1 tbsp coconut sugar

  • Pinch of salt

  • 1/2 cup water

Directions

  • Preheat oven to 180°C (350°F). Line a brownie pan.
  • In a medium bowl, mix the melted coconut oil, apple purée, maple syrup, and flaxseed gel until well combined.
  • Add the rolled oats, oat flour (or extra oats), and cinnamon. Mix until everything is evenly coated.
  • Press the mixture firmly into a lined brownie tin in an even layer.
  • Bake for 25–30 minutes until the edges are golden and the centre feels set but still slightly soft. It will firm up a lot as it cools.
  • Cool completely, (can chill the slab in the fridge for 30+ minutes) and cut into toddler sized bars.
  • Homemade Apple Sauce Recipe (make prior)
  • Add everything to a pot and simmer until the apples are softened and glossy. Cool slightly, then blend until smooth. Stores 3–5 days in the fridge.

Notes

  • Storage:
Fridge: up to 5 days in an airtight container
Freezer: up to 3 months (great for batch cooking!)
