High protein chocolate mousse that’s not only a good source of protein, but also gentle on your gut!

Ingredients

  • 300g silken tofu (room temp)

  • 110g dark chocolate (70%+)

  • 1 tbsp raw honey

  • Optional: 1 tsp vanilla essence (extra flavour)

  • Optional: Pinch of salt (enhance chocolate flavour)

Directions

  • Break chocolate into small pieces and melt it gently, either by using a double boiler or in short (20 seconds) bursts in the microwave, stirring inbetween.
  • In a blender or food processor, combine the silken tofu, melted chocolate, raw honey and optional extras. Blend until smooth and creamy, scraping down the sides as needed.
  • Transfer the mixture to three ramekins or small containers and refrigerate for at least 1 hour to set.
  • Garnish with berries, nuts or drizzle of honey if desired.

Notes

  • Storage: This mousse keeps for 3-4 days in the fridge in an air tight container.
