Ingredients

  • 3 medium carrots (finely shredded)

  • 8 medjool dates

  • 150g walnuts

  • 95g oats

  • 80g maple syrup

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp ground cloves

  • 225g cream cheese (softened)

  • 2 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract

Directions

  • In a food processor, add shredded carrot, dates, walnuts, oats, maple syrup, cinnamon, nutmeg & cloves. Blitz until well combined and sticky (it should hold together when pressed).
  • Press mixture very firmly into a 8×8 (brownie) tin lined with baking paper, set in the freezer for 30 minutes, or fridge for 1 hour.
  • In a medium bowl, add room temp cream cheese, honey or maple syrup, and vanilla extract. Beat with electric hand mixers until frosting becomes smooth and creamy – do not overmix.
  • Remove the base from the freezer/fridge, spread the cream cheese frosting evenly over the top.
  • Refrigerate for 1-2 hours until fully set, slice into 10-12 equal bars. Store in an airtight container in the fridge for up to 1 week,

Notes

  • Tip: Use baking paper to separate layers if stacking the bars in storage- this keeps them from sticking!
