These pillowy, honey-sweetened marshmallows are made without refined sugar, corn syrup, or preservatives. They’re gut-supportive thanks to the grass fed & finished gelatin, and feel like a treat straight from a cottagecore dream.
Perfect in matcha lattes, hot cacao, or just as a sweet treat on their own.
Ingredients
¼ cup grass-fed & finished gelatin
½ cup water (for blooming)
¾ cup raw honey
½ cup water (for heating with honey)
2 tsp vanilla extract
Pinch of sea salt
Tapioca or arrowroot starch (for dusting)
Directions
- Line a medium-sized baking dish with baking paper.
- In a stand mixer bowl (or large mixing bowl if using a hand mixer), add ¼ cup gelatin to ½ cup cold water. Let it bloom for 5 minutes.
- In a saucepan, whisk together ¾ cup honey and ½ cup water. Heat over medium (no whisking) until it reaches 116°C (soft ball stage) — or boil for 7 minutes if you don’t have a thermometer.
- With your mixer on low, slowly pour the honey into the bloomed gelatin. Add vanilla and salt. Gradually increase to high speed and whip for 8–10 minutes, or until soft peaks form and the mixture turns glossy, white, and fluffy.
- Pour into your prepared dish and smooth the top. Let it sit at room temperature for 4–6 hours until firm.
- Dust the top with tapioca starch (optional), then slice into cubes with a knife. Dust all sides if desired.
Notes
- Storage: These will last up to one month if stored correctly in an airtight container in a cool, dark place.
