3 medium carrots (finely shredded)
8 medjool dates
150g walnuts
95g oats
80g maple syrup
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
225g cream cheese (softened)
2 tbsp honey or maple syrup
1/2 tsp vanilla extract
Directions
- In a food processor, add shredded carrot, dates, walnuts, oats, maple syrup, cinnamon, nutmeg & cloves. Blitz until well combined and sticky (it should hold together when pressed).
- Press mixture very firmly into a 8×8 (brownie) tin lined with baking paper, set in the freezer for 30 minutes, or fridge for 1 hour.
- In a medium bowl, add room temp cream cheese, honey or maple syrup, and vanilla extract. Beat with electric hand mixers until frosting becomes smooth and creamy – do not overmix.
- Remove the base from the freezer/fridge, spread the cream cheese frosting evenly over the top.
- Refrigerate for 1-2 hours until fully set, slice into 10-12 equal bars. Store in an airtight container in the fridge for up to 1 week,
Notes
- Tip: Use baking paper to separate layers if stacking the bars in storage- this keeps them from sticking!
