Ingredients
160g whole wheat flour
1/4 tsp baking powder (aluminium free)
80ml milk
100g finely grated tasty cheese
28g cold butter, cut into small cubes
1/2 tbsp cold water
Directions
- Preheat oven to 180°C.
- Add all ingredients to a food processor minus the water, process until well combined and crumbly.
- Add the water to the food processor and pulse until dough comes together.
- Roll the dough between two sheets of baking paper. You want it to be thin to cook evenly(about 2-3mm in thickness). Use a small cookie cutter or a knife to score into small crackers and place these on a lined baking tray.
If the dough becomes too sticky, place it in the fridge for 5 minutes to firm up. - Bake at 180°C for 12–18 minutes, watching closely, until golden and crisp. You can cook for less for a more pillowy cracker, but they will go stale quicker.
- Cool completely before serving. Store in an airtight container for up to 1 week.
Notes
- TIP: This dough yields roughly ~120 small crackers. If you wont eat them all in time, you can portion the dough once made and freeze for up to 3 months. Thaw for 24 hours in the fridge, and then a further ~30 minutes on the bench before continuing from step 4.
